Mom's Cooking!

Okay... the competition is on! Mom wouldn't let dad bring her down. So, she is out to make us dinner tonight. Just kidding!!! :D We had cub scout and YW activity, so the kids made a special request of simple, yet delicious meal from their grandma.

This is one of my favorite dishes growing up and it's made of ground pork, mushroom, dry shrimp and scallop.

See me drooling again???

it's really easy to make, esther....

1 pd of ground pork (marinate with soy sauce, salt and sugar)
10-15 dry mushrooms (soak in water, then diced)
5 dry scallops (soak in water, then shredded)
1/2 c of dry shrimp (soak in water, then chopped)

Save the soaking water, pour into the rice cooker with 1 tsp of salt and oil. Add five c. of rice. Add water until it reachest the 5 marking level on your rice cooker.

In a medium skillet, stir fry all the ingredients and pour it over the rice. Mix and serve. Hope you enjoy it! :)
