Chinese Sponge Cake

I was planning to make Mochi but ended up making Chinese Sponge Cake after flipping through my recipe book - because it looks easier to make. :)

It came out ok... I would give myself 70 points becuase the texture was a little stiff and coarse. Might have to try an add another egg to give a smooth and fluffy texture.
